A Croquembouche or croque-en-bouche is a French dessert consisting of choux pastry balls filled with vanilla 
creme patisserie and piled onto a cone and bound with threads of caramel. In Italy and France, it is often served at weddings 
and has proven a very popular choice in the UK for a unforgettable wedding / function centre piece.

Due to the creme patisserie over time softening the choux bun and the caramel the croquembouche has to be delivered a 
maximum of 3.5 hours prior to eating to ensure its stability and profiteroles not going soggy. We create our towers with a 
poly cone remaining Inside to assure stability and to give the client a longer display time. the cone will not be visible 
however, but gives the client a longer display time. For chocolate versions the display time can be up to 5 hours.
